FOCACCIA BREAD: Preheat oven to 450 Degrees. Cut bread into 1 - inch clices and place on a cookie sheet. Heat for about 5 to 10 minutes or until crispy.
MANICOTTI: (FROZEN) Preheat oven to 350 degrees. Place manicotti in a ovenable dish or pan. Add sauce to the bottom of pan and top of manicotti, cover with Aluminum foil and bake for about 1 1/2 hours. Remove foil and sprinkle mozzarella on top of manicotti and bake until cheese is melted.
(Shelf life of fresh pasta is 3 - 4 days)
WATER TO PASTA RATIO
5 PARTS WATER TO 1 PART PASTA
(FRESH) In a large pot, salt water to taste and bring to a boil. Add pasta and stir immediately to keep pasta from sticking. Cooking time is 2 minutes.
(FROZEN) Allow 20 seconds after being placed in boiling salted water. Slowly separate pasta with a fork. Cooking time is 3 - 4 minutes.
RAVIOLI: Same water ratio. Cooking time 5 - 7 minutes.
TORTELLINI: Same water ratio. Cooking time 12 - 15 minutes.
CAVATELLI: Same water ratio. Cooking time 12 - 18 minutes.
POTATO GNOCCHI: Same water ratio. Cooking time 6 - 8 minutes.
